Breakfast Pizza

from the kitchen of Chef Paul Prudhomme

makes 1 12-inch pizza

ingredients
1 12-inch pizza crust
1/4 cup ketchup
1 tablespoon Chef Paul Prudhomme’s Herbal Pizza and Pasta Magic™
6 ounces breakfast sausage
6 extra large eggs
olive oil, for brushing
how to prepare

Preheat the oven to 400°.

Brush the pizza crust lightly with olive oil.   Spread the ketchup in a thin layer on the crust, avoiding the edges.   Sprinkle the crust with the Herbal Pizza & Pasta Magic.  Spread the sausage as thinly as possible on the crust.

Bake at 400° until the sausage is cooked, about 10 minutes.  Beat the eggs until fully combined.  Remove the pizza from the oven and pour the beaten eggs over the sausage.  Return the pizza to the oven and continue to bake until the eggs are set, about 8 minutes.  Serve immediately or keep refrigerated until ready to serve.
