Easy Microwave Buttercup Squash

Serves 1 to 2 persons

ingredients

2 tablespoons unsalted butter or olive oil

1 package (7 grams) Chef Paul Prudhomme's Vegetable Magic®

1 package (12 ounces) New Zealand buttercup squash, cut into 1/2-inch dice

how to prepare

Preheat the oven to 350°.

Combine the butter, Vegetable Magic and the squash in a microwave safe plastic bag or a small microwave-safe covered casserole dish. Microwave on high until the squash is tender, about 3 to 3½ minutes. Stir well and serve.
