Shiitake Mushroom Relish - No Salt & No Sugar™

from the kitchen of Chef Paul Prudhomme

Makes 3 cups

ingredients
2 tablespoons vegetable oil
7 ounces fresh shiitake mushrooms, sliced
2 ounces julienne carrots
2 ounces julienne celery
4 ounces sliced onion
1/2 cup rice vinegar
3 packet Stevia sweetner
2 teaspoons Paul Prudhomme's Sweet and Spicy No Salt, No Sugar Seasoning®
2 teaspoons chopped fresh cilantro (coriander leaf)
1 tablespoon sesame oil
how to prepare

Sauté all the ingredients except the cilantro and sesame oil until half cooked. Transfer to a bowl and add the cilantro and sesame oil. Refrigerate immediately.
