ROASTED BUTTERCUP SQUASH

teaspoon olive oil
1 package New Zealand Buttercup squash, cut in ½-inch dice
1 teaspoon Chef
Paul Prudhomme's Vegetable MagicŪ
Preheat the oven to 350°.
Brush
the squash on all sides with the olive oil. Sprinkle 1 teaspoon
of the Vegetable Magic evenly on all sides
of the squash, including the bottom. Place the squash on
a baking sheet. Roast in oven until the squash can be pierced
easily with a fork and the edges of the squash are beginning
to brown, about 1 hour. Remove from oven and serve.
