Baked Egg Strada
1 onion, chopped
1 tablespoon Chef Paul Prudhomme's Meat Magic®
1 green bell pepper, chopped
1 yellow bell pepper, chopped
1 red bell pepper, chopped
1 pound Chef Paul Prudhomme's Tasso
fresh mushrooms, sliced
3 cups half & half
7 slices crustless sour dough bread, cubed or your favorite white bread
¾ pound Mozzarella cheese, grated
¾ pound sharp cheddar cheese, grated
how to prepare
Preheat oven to 350º.
In a large skillet over medium heat sauté onions and Meat Magic® until onions are golden brown. Add all three bell peppers and tasso or smoked ham and sauté 4-5 minutes. Add mushrooms and sauté 2 or 3 minutes more and remove from heat.
In a large bowl, whisk eggs until frothy, then add half & half and whisk together with the eggs. Stir in bread cubes, cooked vegetables and all the cheese. Add additional seasonings to taste.
Pour into 1 greased 9" x 13" oblong cake pan and bake approximately 45 minutes. To check doneness, stick a knife into middle of casserole and make sure that it comes out clean. If Strada appears to brown too quickly, you may want to loosely lay a piece of aluminum foil over pan. Do not wrap tightly with foil!
Tasso is a seasoned ham. If you use Tasso, cut back on the amount of Meat Magic® you use to compensate for the seasoning already on the Tasso.
