Makes about 20 hushpuppies

¼ cup + 2 Tbsp all-purpose flour
¼ cup + 2 Tbsp corn flour
½ cup corn meal
¼ tsp baking soda
4 tsp sugar
1 egg
¼ cup milk
¼ cup buttermilk
½ cup green onions, sliced thin
how to prepare

Sift first 6 ingredients together into a bowl.  Make a well in the center of the dry mix and crack the egg into it, also adding the milk and buttermilk.  Stir together with a rubber spatula or wooden spoon just until smooth.  Stir in green onions.  Place in refrigerator for 15 minutes.  Heat fryer to 350°F.  Add mix, 1 tablespoon at a time, to oil and fry for 5 minutes, making sure to turn hushpuppies over every now and then to brown and cook evenly.  Remove from oil and drain on paper towel lined pan before serving.
